Anzac Biscuits

Makes 35 biscuits

Ingredients:

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup sugar
  • 125g butter
  • ½ cup dessicated coconut
  • 2 tablespoons golden syrup
  • 1 teaspoon water
  • ½ teaspoon bicarb soda

Method:

  1. Preheat oven to 180° Celcius.
  2. Combine the flour, oats and coconut together.
  3. Melt the butter and the syrup and mix together.
  4. Mix the bicarb soda with boiling water and combine with the butter and syrup.
  5. Add the two mixtures together.
  6. Roll the mixture into small balls (about the size of a teaspoon) and place onto a greased baking tray. Make sure to allow room for expansion.
  7. Bake for 15-20 minutes (depending on how firm you want your biscuits to be).
  8. While still warm, loosen the biscuits from the tray. When they are cool remove and store in a cool, dry place.
